Les Aubergines à la Parmigiana , called Eggplant Parmigiana in Italy, are one of the most emblematic dishes of southern Italian cuisine. 🧾 Ingredients (for 4 people)

  • 2 grosses aubergines

  • 300 ml of tomato coulis

  • 1 gousse d'ail

  • 1 bouquet de basil frais

  • 2 cuillères with olive oil soup

  • Salt, pepper

  • Optional: chapelure pour gratiner légèrement

1. Prepare the aubergines

  • Wash and cut the aubergines in 1 cm thin slices of wood.
