Crispy Zucchini with Paprika and Parmesan (Air Fryer)
Zucchini is an incredibly versatile summer vegetable, light and packed with nutrients. If you're looking for a delicious way to enjoy them without weighing you down, this recipe is perfect for you. In just a few minutes and with very little oil, thanks to the air fryer , you can create zucchini that's crispy on the outside and soft on the inside , enhanced by the aroma of paprika and the natural flavor of parmesan. A quick and healthy side dish, also ideal as a snack or finger food for an aperitif!
Ingredients (for 2 people)

2 medium courgettes

2 tablespoons grated Parmesan cheese

1 teaspoon sweet or smoked paprika

1 teaspoon breadcrumbs (optional, also gluten-free)

1 tablespoon extra virgin olive oil

Salt and pepper to taste

Herbs to taste (e.g. oregano, thyme, or mint)
Procedure

Wash and slice the courgettes into rounds about 0.5 cm thick or into sticks.

Season in a bowl with oil, paprika, Parmesan, salt, pepper, and (optional) breadcrumbs.

Mix well to distribute the seasoning.

Arrange them in the air fryer basket , without overlapping them.

Bake at 200°C for 12–14 minutes , turning halfway through, until golden brown.
Chef's advice
Serve them with a light sauce made with Greek yogurt, lemon juice, and chives: fresh, creamy, and perfect to accompany them!
